It aroma is strong and its taste is peculiarly slightly bitter. It is lighter or darker amber coloured, its texture is basically liquid and its crystallization is very slow. It has a surprisingly powerful aroma and an extremely fine bitter aftertaste. Its warm and forest-like scents and aromas remind of grilled caramel. It is a full-bodied, strong and persistent honey.

Being strongly aromatic, Terre d’Eccezione organic chestnut honey is the ideal choice for enhancing the taste of meat, game animals and seasoned cheeses. It wonderfully matches with strong tastes. It is also if combined with slightly smoked dishes. It is fabulous on fresh cheeses like ricotta or cow and sheep milk cheeses, but it proves perfect if combined with seasoned cheeses like Parmigiano Reggiano. Regarding beverages, it is suitable to accompany black tea, non-fruity red wines and non-industrial beers. During winter, it could be appreciated with hot milk (not boiling) enriched with a touch of cocoa powder.
